Horiatiki Salata (Greek Village Salad)

This salad is all about fresh, high-quality ingredients. No lettuce needed here!

Yields: 2-4 servings Prep time: 10 minutes

What you'll need (Τα υλικά - Ta ylika - The ingredients):

  • Ντομάτα (toh-MAH-tah) - Tomato: 2-3 ripe, firm tomatoes, cut into wedges

  • Αγγούρι (ah-goo-REE) - Cucumber: 1 medium cucumber, peeled (optional) and sliced

  • Κρεμμύδι (kre-MEE-dee) - Onion: ½ red onion, thinly sliced

  • Πιπεριά (pee-peh-RYAH) - Bell Pepper: ½ green bell pepper, deseeded and sliced (optional, but common in many regions)

  • Ελιές (eh-LYES) - Olives: A handful of Kalamata olives (pitted or with pits, your preference!)

  • Φέτα (FEH-tah) - Feta: A generous block of authentic Greek feta cheese

  • Ελαιόλαδο (eh-leh-O-lah-thoh) - Olive Oil: Generous drizzle of good quality extra virgin olive oil

  • Ξίδι (KSEE-thee) - Vinegar: A splash of red wine vinegar (optional, but adds a nice tang)

  • Αλάτι (ah-LAH-tee) - Salt: To taste

  • Ρίγανη (REE-gah-nee) - Oregano: A good sprinkle of dried Greek oregano

Let's Make It! (Πάμε να το φτιάξουμε! - Pah-meh na toh FYAH-xoo-meh!):

  1. Κόβουμε (KO-voh-meh) - We cut: In a large bowl, combine the tomato wedges, sliced cucumber, red onion, and green bell pepper (if using).

  2. Προσθέτουμε (pro-STHEH-toh-meh) - We add: Scatter the Kalamata olives over the vegetables.

  3. Τοποθετούμε (toh-poh-theh-TOO-meh) - We place: Gently place the block of feta cheese on top of the vegetables. Many Greeks prefer to keep the feta as a whole block rather than crumbling it, letting guests break off pieces as they wish.

  4. Περιχύνουμε (peh-ree-HEE-noo-meh) - We drizzle: Generously drizzle the extra virgin olive oil over the entire salad, especially over the feta. Add a splash of red wine vinegar if desired.

  5. Πασπαλίζουμε (pas-pah-LEE-zooh-meh) - We sprinkle: Season with salt to taste and a generous sprinkle of dried Greek oregano.

  6. Απολαμβάνουμε! (ah-poh-lahm-VAH-noo-meh!) - We enjoy! Serve immediately with crusty bread to soak up all those delicious juices.
